We spent the day with Ampersand Brew Co. making our official Norwich Craft Beer Week collaboration beer. A 4.7% EAIPA (East Anglian IPA) – a hazy, smooth IPA double dry hopped with Citra and Mosaic.
On the 24th June we were invited to the Ampersand Brew Co. brewery barn based in South Norfolk to brew our exclusive collaboration and official NCBW beer – what else could we make other than a hopped up hazy IPA! Inspired by the New England style but using local Norfolk malts the EAIPA was born.
As we arrived the water was just reaching temperature and soon we were ready to mash in. This recipe used 50% Golden Promise Pale Malt, 25% Munich Malt to help add some colour and will add body without too much sweetness, 20% Wheat Malt to add body and head retention and 5% Light Crystal. 3kg of rolled oats joined the grist to help give a full, smooth mouth feel.
After the sparge had washed the precious sugars from the grain, the hard work started. Although digging out the mash tun was enjoyable I can see how the novelty would soon wear off!

So it was on to the boil, Magnum hops were used for bittering and an impressive amount of Citra and Mosaic were added towards the end of the boil. With two further dry hop additions to come we are hopeful this beer will pack a punch.

The beer will launch from the 4th August across bars and bottle shops across the city so grab some while it lasts!
